Starter: fig and damson (taste earthy rich and sweet)

Main: lavender and rose meringue mess, elderberry syrup

All late summer flowers (lilac, red flowering currant notably) seem to work well with sugar. Crystallise some clean dry petals with aqua farba or eggwash and caster sugar, boil up with water and sugar to make a simple syrup- distill for rosewater.

Cook them into a fluffy meringue for extra infused aroma and interesting texture and then serve with syrup or crystalised petals and thick whipped cream.
