Starter: evening primrose buds (taste sweet and mild, gel like texture)

Main: hedgerow ketchup

As soon as you see the berries start to get fat go on a walk and collect any that you like- the last of the elderberries, blackberries, crabapples, rosehips and most of all, hawthorns which combine to be a kind of apple-tomato-berry flavour. Clean them up in a bowl of water removing all the stalks (for the elder, a fork works well) and then put into a pan with water and a cup of vinegar along with any of your favourite barbecue type spices like mustard seeds, or cinnamon, and boil down  for 30 minutes into a mashed pulpy red mass. Pass the fruit pulp only through a sieve as much as you can, discarding the seeds, skins and all the fuzz stuff and it is already a magic, thick, sauce.  You can add back any of the liquid if needed to loosen, and then stir in soft brown sugar to taste.
