Starter:  samphire and purslane (taste of salted raw sweet greens, fresh and crunchy)

Main: elderflower sun infusion

This is beautiful in its simplicity. In the morning, pick elderflowers that are bursting with scent, full of pollen and nectar, and put them in a jar. Fill with fresh clean water and put on a lid. Leave in the sunniest spot, and then at golden hour, strain them, and drink the sun brewed tea. Add anything else nearby that smells good- honeysuckle perhaps. Some people make cordial, but I don't think it needs sugar or lemons. Sun tea will make any fresh flower or herb (try mint) into such a lovely extraction.
